1 cup butter
1 cup granulated sugar
1 cup powdered sugar
2 eggs
1 cup vegetable oil (I use coconut)
1 tsp. vanilla extract
4 cups & 4 tsp. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cream of tarter
- Preheat oven to 350 degrees F. I like to line my cookie sheets with parchment paper for these cookies.
- Cream butter and sugars together. Add eggs, oil, and vanilla and mix well.
- Sift dry ingredients together then add to mixture.
- Chill dough.
- Roll into small balls (I make mine about the size of acorns) then roll in powdered sugar.
- Bake for 9-10 minutes depending on the size of your cookies.

I LOVE sugar cookies. I don't think I have ever seen vegetable oil in a sugar cookie before? Maybe that is what makes them melt in your mouth? They look delicious.
