Here is the pizza crust recipe I used.
1 1/2 cups water, 80-90 degrees F
1 tsp sugar
2 tsp sea salt
2 Tbs extra virgin olive oil
3 1/4 cups bread flour
3/4 cup whole wheat flour
2 1/4 tsp active dry yeast
Put all the ingredients in a bread machine in the order listed, set the machine to the dough setting (2 lbs.), and let it do its magic!
This made enough dough for two pizzas. I split it in half and used one for the pizza tonight and wrapped the other in plastic wrap then put it in a freezer bag and put it in the deep freeze for pizza another night. I'm working on freezer meals so I think I'm going to make another batch tomorrow and freeze all of it too.
Here is the recipe my friend said she used for the pesto http://simplyrecipes.com/recipes/fresh_basil_pesto/. She used chinese basil and walnuts. I'm definitely going to make a huge batch of this soon to freeze for my freezer meal plan. If I'm using store bought pesto I always buy the refrigerated Buitoni brand, it's the best I have found.
For the toppings I spread out about 3/4 cup pesto on my unbaked pizza crust. I sautéed about 1 cup of sliced cremini mushrooms and 1/2 of a thinly sliced red onion in 1 Tbs of butter until they were slightly browned. I spread the mushroom and onion mixture over the pizza (I left it off one section of the pizza so my picky kids would eat it). I topped that with 8 oz. of shredded provolone and about 1/4 cup of parmesan. I baked it at 500 degrees for about 20 minutes until my crust was done and the cheese was a delicious shade of brown :)
