Meatless Monday- Cheese Tortellini with Toasted Walnuts

I did a post last week at Women Who Do It All about eating less meat. Basically, Americans are eating about 5 times more meat than we were 50 years ago and it's harming our environment. Waterways are being polluted with animal waste from factory farms. Livestock produce a tremendous amount of greenhouse gas and use a substantial amount of our water supply. Deforestation is also occuring in tropical areas to make room for grain production to feed livestock. If you are not eating locally raised meat then chances are your meat has traveled to you from an average of 1,500 miles away which also results in more greenhouse gases.

Like Gandhi said, "Be the change you wish to see in the world." So what can you do to help? Just REDUCE your meat consumption. Throw a few meat free meals into your menu each week. When a recipe calls for meat, reduce it by half or a third. Eat locally raised meat. Every Monday I will be sharing a meat free recipe with you so stay tuned :)

This Monday I have a delicious pasta recipe for you that even my husband, who happens to think everything "needs more meat," loved!

Cheese Tortellini with Toasted Walnuts
Ingredients
1 pkg (9 oz) refrigerated cheese tortellini
5 Tbs. butter
1-2 cloves fresh garlic, minced
1/2 cup fresh parsley, minced
1/3 cup toasted walnuts (to toast, spread out on a cookie sheet and bake at 350 degrees F for 7-8 minutes)
1/4 cup grated Parmesan cheese
Coarsely ground pepper or crushed red pepper flakes

Directions
Cook tortellini according to package directions. In the meantime, sauté minced garlic in 1 Tbs of the butter until slightly browned. Turn off heat and add remaining butter to melt. Drain pasta when done and return to pan. Add butter and garlic mixture, fresh parsley and toasted walnuts. Top with Parmesan and coarsely ground pepper or red pepper flakes.

This recipe only makes 3 servings so if you have a large family then I recommend doubling it. I wish we would have had leftovers!
