Black Magic Cake with White Chocolate Buttercream Icing

Proceed with caution!!! I think this cake is called magic because you will magically gain 10 pounds just by looking at it! Don't worry though, it's totally worth it :) I've been making a lot of healthy desserts lately like the Garbanzo Bean Gluten Free Chocolate Cake and the Paleo Apple Blueberry Pie so I figured I deserved a naughty dessert. It's all about balance right??

I borrowed the Black Magic Cake recipe from My Baking Addition but used coconut oil instead of vegetable oil. Now I like chocolate but I'm not a death by chocolate kind of girl so I knew I wanted a white frosting for my cake. I got the idea for the white chocolate buttercream icing from Sugary Sweets but changed it up a little too. This cake is so AMAZING and I can't wait to make it again for Lennon's third birthday next month! The search is over, this is definitely my new go to chocolate cake recipe.

Cake
2 c. sugar
1 3/4 c. all-purpose flour
3/4 c. cocoa powder
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 eggs
1 cup buttermilk
1 cup strong black coffee
1/2 cup coconut oil
1 tsp. vanilla extract

Preheat oven to 350 degrees F. Grease and flour two 9 inch round baking pans. Stir together first 6 ingredients in a large bowl. Add remaining ingredients and mix on medium speed for 2 minutes. Pour batter evenly in prepared pans. Bake for 25-30 minutes or until toothpick inserted in the middle comes out clean. Cool for 10 minutes then turn out onto wire racks and cool completely.

Icing
1 c. butter, softened
12 oz. white chocolate, melted
3 c. powdered sugar
3-4 Tbs. milk
1 tsp. vanilla

Beat butter and add melted white chocolate. Beat until creamy then add remaining ingredients and mix for a couple of minutes.

Put a generous amount of icing on top of the first cake layer and spread from the middle outwards (push your icing, don't pull it, to prevent getting cake crumblies in it). Put the next cake layer on and ice the top then the sides. Decorate it however you would like. I pressed white chocolate chips around the sides of mine. Then get yourself a tall glass of milk ready because you're going to need it!

  1. This is my very favorite chocolate cake recipe! It's funny you posted it because I just made it last week for my birthday. Only, I use cream cheese frosting instead! I'm a huge cream cheese frosting lover. I put it on everything! :)

  8. Great minds think alike! I made the same cake (from a different source) and made a mocha frosting for mine. I absolutely love the white chocolate chips pressed into the side. So cute!

  14. I made the same cake, from My Baking Addiction. This will be my go to chocolate cake, what I loved was only one bowl. It is the best cake I have ever made. I used a fluffy white icing. My mother's white frosting and had a really hard time to find it on a blog but I did. Good choice Andi
