Meatless Monday

It's Meatless Monday again! Here is a light and healthy meal with recipes adapted from the Holistic Moms Network cookbook called Many Paths, One Journey to Health.
Grilled Cheese with Spinach and Tomato Sauce
2 Tbs. olive oil, divided
1 small onion, minced
2 cloves garlic, minced
1 (15oz.) crushed tomatoes in thick puree
1/2 tsp. salt
1/4 tsp. fresh ground pepper
1 lb. spinach, stems removed and leaves shredded

8 thin slices of bread
4 slices of fresh mozzarella
4 slices of provolone

Cook onions in 2 Tbs of oil for about 5 minutes. Add garlic, tomatoes, salt, and pepper and simmer for another 5 minutes. Add spinach and simmer for about 5 minutes longer or until spinach wilts and sauce thickens. Cover and keep warm.

Assemble grilled cheese sandwiches and cook in a little bit of butter or olive oil on each side until browned.

Use spinach and tomato sauce for dipping or simply pour it over your sandwich and eat it with a fork!

Spiced Sweet Potato Fries
3-4 sweet potatoes or yams, sliced into fries
1 Tbs. olive oil or toasted sesame oil
1 Tbs. balsamic vinegar
1 Tbs. maple syrup
2 tsp. cinnamon
Coarse sea salt to taste

Preheat oven to 400 degrees F. Put sliced potatoes in a large bowl. Drizzle on the rest of the ingredients and toss until evenly coated. Spread out coated fries in a single layer on a cookie sheet. Bake for 30-40 minutes tossing every 10 minutes. Cooking time will vary depending on the thickness of your fries.
