Apple Strudel Muffins

Mmmmm, these muffins are perfect for fall! I even made a healthier version of the original recipe at allrecipes.com and they were still great. I can only imagine what the full fat, all white flour version would taste like!  


Ingredients
Muffins
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/4 cup butter, room temperature
1/2 cup applesauce
1 cup white sugar
2 eggs
1 1/4 tsp vanilla
1 1/2 cups chopped apples

Topping
1/2 cup white sugar
1/2 cup packed brown sugar
1/4 cup quick outs
1 tbs whole wheat flour
1/tsp cinnamon
1 1/4 Tbs butter

Directions
Preheat oven to 375 degrees F and grease a 12 cup muffin pan.

Mix the first five ingredients of the topping in a small bowl. Cut in butter until mixture looks like coarse crumbs. Set aside.

Mix the first six ingredients for the muffins together in a medium bowl.

In a large bowl, beat butter, applesauce, sugar, and eggs together until smooth. Stir in vanilla and chopped apple. Gradually add flour mixture and mix until combined. Spoon into prepared muffin pan.

Sprinkle the topping mixture over the tops of each muffin.

Bake 18-20 minutes in a preheated oven. Allow to cool 5 minutes before removing them from the pan to a wire rack to cool completely.
