Meatless Monday- Hearty Corn Chowder

Mmmm, this soup will warm your tummy! It's creamy and full of flavor. The red skinned potatoes, bright yellow corn, and green celery give it nice color and the chewy sourdough crouton and melted cheese make it even more delish! 
Recipe adapted from Don't Panic More Dinner's in the Freezer.


Hearty Corn Chowder
1/4 butter, melted
6 Tbs onions, chopped
3/4 cup celery, diced
2 1/2 cups chicken broth (or water)
2 cups red potatoes, cubed
3 cups frozen kernel corn
2 tsp salt
1/4 tsp pepper
3 Tbs flour
1 quart half-and-half
shredded cheese for garnish

Sauté  onions and celery in butter until tender. Add broth, potatoes, corn, salt, and pepper and bring to a boil. Cover, turn down heat, and simmer for about 30 minutes or until potatoes are tender.

In a small bowl, whisk together flour and 1 cup of the half-and-half. Stir into soup then add remaining half-and-half. Cook until soup reaches your desired thickness, stirring frequently. Top soup with cheese.
