Paleo Apple Blueberry Pie

Healthy pie, can it really be true? Yes! We had a potluck brunch at our house today with our unschooling friends and this is one of the things I made. If your not familiar with the Paleo diet, here is how Wikipedia defines it, "Paleolithic diet consists mainly of fish, grass-fed pasture raised meats, vegetables, fruit, roots, and nuts, and excludes grains, legumesdairy products, salt, refined sugar, and processed oils."

Ingredients
2 c. dates
1 c. nuts (I used almonds but I have used pecans before)
5 sm. organic apples, peeled, cored, and diced
1 c. frozen organic blueberries
2 tsp cinnamon
1/4 c. maple syrup (you could also use honey)

Preheat oven to 375 degrees F. Process dates and nuts in a food processor until they form a smooth oily dough. Press firmly into a pie plate. Mix apples, blueberries, cinnamon, and maple syrup in a bowl then pour into crust. Bake for 20-25 minutes.

  3. I made this pie today....it is Delicious and oh so easy! I used fresh blueberries and organic Maple Syrup. This will be one of my go to desserts!
    Thanks so much! P.S. My son and his wife stopped by...I am sure they could smell it miles away...it is that good! They took some home.
