Recipe of the week

If you read my post from yesterday you'll recall that lately I haven't been very motivated and that I plan to get out of my rut. So last night I came home from work on a mission to get some things done. I have had a bunch of organic apples in my crisper for about a month now and I've been planning to do something with them but just hadn't yet. I decided to make an apple crisp. Another thing I've been planning on doing is making over my blog. It's become quite stale lately... You'll be seeing some changes over the next week and as I was making my apple crisp last night I decided to start a weekly recipe post. They will probably feature mostly desserts because that is my favorite thing to make and eat : )

Apple Crisp
10 cups of apples, peeled, cored and sliced
1/4 cup white sugar
1 Tbs flour
1 tsp cinnamon
1/4 cup maple syrup
1/4 cup water
1 cup quick oats
1 cup flour
1 cup brown sugar
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup melted butter
  • Preheat oven to 350 degrees
  • Place sliced apples in a 9x13 inch baking pan. Mix the white sugar, flour, and cinnamon together and sprinkle over apples. Pour water and syrup evenly over all. 
  • Combine the oats, flour, brown sugar, baking powder, baking soda, and melted butter together. Crumble evenly over the apple mixture.
  • Bake at 350 degrees for about 45 minutes.
I like my apples pretty soft so I slice them thin. You can slice them thicker if you prefer them to remain a little crunchy. The original recipe called for one whole cup of white sugar and 1/2 cup of water in the apple mixture but I cut it down to 1/4 cup white sugar and added 1/4 cup maple syrup then reduced the water by 1/4 cup. You can also add fresh or dried cranberries and sometimes I substitute pears for some of the apples. It's yummy any way you make it : )
