Recipe of the week- Chipotle Quiche

Chipotle Quiche  
1 pie crust
6 slices of bacon, cut into small pieces
1 medium sweet onion, diced
1 medium sweet red bell, diced
5 oz. fresh baby spinach, chopped
8 oz. grated cheddar cheese
5 large eggs
1/2 cup milk, beaten
1/2 - 1 Tbs. ground chipotle chili powder to taste

  • Preheat oven to 375 degrees F. Prepare pie crust in a pie dish. 
  • Cook bacon then remove from pan. Add onions and red peppers and cook until tender. Add spinach and stir until wilted. Remove pan from heat and stir bacon back into mix. 
  • In the meantime, lightly beat eggs in a large bowl. Stir in cheese, milk, and chipotle pepper. Add vegetable and bacon mixture and stir until blended.
  • Pour mixture into pie shell and bake for 40-45 minutes. Let rest for 10 minutes before serving.   
This recipe is awesome!!! We like it spicy so I use the full 1 Tbs. of chipotle pepper. The original recipe was for a crustless quiche but the crust is one of my favorite parts of a quiche so I used one. But just know that you can omit it if you want, just be sure to grease your pie plate. The original recipe also called for 10 oz. of fresh spinach but that seemed like way too much so I cut it in half. I think my version is perfect :)
