Quinoa Burgers with Roasted Garlic Cauliflower
Quinoa burgers from Eating Well Living ThinIngredients
2 rounded cups cooked quinoa
3/4 cup shredded cheddar cheese (I used Colby Jack because that's what I had in my fridge)
1 medium carrot finely grated or 1 cup grated zucchini, squeezed
3 eggs
3 Tbs all-purpose flour (you may need to add a little more if they will not hold together, I did)
2 green onions, sliced, including white parts
1/2 tsp sugar
1/4 tsp black pepper
1/4 tsp ground cumin
1/8 tsp salt
1/8 tsp garlic powder
Olive oil for frying
Directions
In a large bowl combine all ingredients except for the olive oil. Heat a couple of teaspoons of olive oil over medium-high heat. Make 1/2 inch thick patties from about 1/4 cup of the quinoa mixture- they will be sticky! Fry about 4 minutes on each side or until golden brown.
While the looks of my patties paled in comparison to the gorgeous burgers at Eating Well Living Thin, they were still pretty good! I sliced up some avocado and drizzled Sriracha hot chili sauce over mine. I almost always have plain greek yogurt in the fridge because we use it in place of sour cream but I was out when I made these. They would have been awesome with a scoop of that on top! The next time I make these I will add more cumin and garlic powder for more flavor.

Ingredients
2 Tbs minced garlic
3 Tbs olive oil
1 large head of cauliflower, separated into flowerets
1/3 cup grated Parmesan
salt and pepper to taste
1 Tbs minced fresh parsley
Directions
Preheat oven to 450 degrees F. Mix all ingredients in a large casserole dish (allrecipes says to do this in a large resealable bag but I think it's unnecessary and wasteful). Place casserole dish in the preheated oven and bake for 25 minutes (maybe longer if you want them a little more tender) stirring halfway through. Top with Parmesan and parsley. Broil 3-5 minutes or until golden brown.

I am so curious about Quinoa but I have never seen it in the grocery store. Maybe I should try Whole Foods? Looks great thanks for sharing!!
ReplyDeleteI think I bought some at Target one time but the last time I was there I couldn't find any. They would definitely have it at any health food grocery store.
