Melt-In-Your Mouth Shortbread

My family is crazy for shortbread and this is my go-to no-fuss shortbread recipe. It is soft, buttery, not overly sweet, and goes perfect with coffee or tea.

Melt-In-Your-Mouth Shortbread
2 cups butter, softened
1 cup white sugar
2 tsp vanilla or almond extract
4 cups all-purpose flour
2 tsp cornstarch

Preheat oven to 325 degrees F. 

Cream butter thoroughly. Add vanilla or almond extract then slowly add sugar and mix well. Sift together flour and cornstarch, add to butter mixture and mix well. Press into an ungreased jelly roll pan (11x15"). 

Bake for 30 minutes. Cut shortbread into pieces while it is still warm. Enjoy!
