The cream of tarter mystery

So what the heck is cream of tarter? I don't know how many times I've wondered this as I leveled off a teaspoon of cream of tarter and dumped it into my dry ingredients for baking. Well today was the day that I solved this mystery thanks to the handy, informative internet!

Also known as potassium bitartrate, cream of tarter is a natural substance made from the crystalized sediment that is left in the barrels after the wine making process, which explains its tart taste!

Uses for cream of tarter:

  • As a cleaner when mixed with vinegar.
  • Stabilize egg whites and increase their volume and heat tolerance. 
  • Reduce discoloration in boiled vegetables when added to water.
  • Mix with baking soda to make baking powder.
  • Stabilize whipped cream after it has been whipped.
  • Prevents the crystallization of sugar.
