Garbanzo Bean Chocolate Cake

This cake is gluten free. We don't have any food allergies in my family thankfully but I'm always willing to try new and healthy recipes. I will admit I was a little skeptical of this recipe, garbanzo beans in cake, could this really taste good? YES, it actually did! I mean, it's no Chocolate Yum Yum Cake but it's definitely a good and healthy substitute for brownies and will for sure fill your chocolate craving. My husband was shocked when I told him that it was made with garbanzo beans and I didn't dare tell my kids!
Recipe adapted from Holistic Moms Network cookbook.
Ingredients
1 (12 oz.) pkg of high quality semi-sweet chocolate chips, melted
2 cups cooked garbanzo beans, drained and rinsed
4 eggs (farm fresh is always best!)
1/2 cup organic sugar
1/2 tsp baking powder

Preheat oven to 350 degrees F. In a food processor or blender, combine all ingredients and process until smooth. Pour into a greased 9-inch round pan and bake for 40-45 minutes. Cool thoroughly and sprinkle with powdered sugar if desired.

  2. Coming her from Craft -O - Maniac. I bought a 2 or 50 pound jar of garbanzo beans from Costco and it sat and sat till one day I finally opened it, and used it for 4 or 5 days for everything I could possibly think of...until finally I threw away most of them...where oh where were you and your chocolate recipe? I am the worlds worst chocoholic...well now I'm just gonna have to follow you! See what you've gone and done?

  4. The texture was actually really nice, a little drier than a brownie but still good! Just be sure to process the heck out of it and get it as smooth as possible. Occasionally I would get a bite that was just a little grainy from the garbanzo beans but not enough to really notice unless you know what the ingredients are :)
