Recipe of the week

I had some buttermilk in my fridge that needed to be used so I made a buttermilk pound cake today. I love pound cakes! They have such a simple flavor and go great with fresh fruit like the organic strawberries I topped mine with, YUMMY!!!

Buttermilk Pound Cake

3 cups all-purpose flour
1/4 tsp baking soda
1/2 tsp salt
1 cup butter
3 cups white sugar
6 eggs
2 Tbs vanilla extract
1 cup buttermilk


  • Preheat oven to 325 degrees F. Grease one 9 or 10 inch tube or bundt pan. Mix together flour, baking soda, and salt. Set aside.
  • In a large bowl, beat butter with sugar. Mix in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract. Gently mix in the flour mixture alternatively with the butter milk. Pour batter into the prepared pan.
  • Bake in preheated oven for about 70 minutes. Do not open door until after one hour! Let cool in pan for 10 minutes. then turn out onto a wire rack or cake plate and cool completely. 
You can add any extracts to this. Fresh lemon juice and zest would also be great! The original recipe says to bake for 90 minutes or until cake pulls away from the sides of the pan. Mine started to brown up nicely after about 70 minutes so I took it out and it turned out perfect. Very moist and delicious :)
